Upstate NY offers plenty of scenic drives but I've forgotten most specific roads to recommend. The Catskills area from Kingston or thereabouts towards Oneonta is scenic and a pleasant, challenging hilly ride map car used. Of course, it goes without saying that you'd want to pick an off-season time to do the drive lest you get cemented into traffic.
